Goatsbridge Trout Farm Co.Kilkenny
In March we made a short trip down to Kilkenny to visit one of our suppliers, Goatsbridge Trout Farm. Goatsbridge Trout is run by Mag and Ger Kirwin, they live on the farm with their family and work together to carry on the proud tradition of purity and sustainability. Each daily catch comes directly from the crystal clear Irish waters of The Little Arrigle to your table. They have a passion for trout, which comes across in the quality of their product.
The farm is open to visitors so we had a little look around, as you can see you cannot get much fresher, an absolutely wonderful product.
Bill Casey Irish Organic Smoke Salmon Co.Cork
Bill Casey is one of our longest standing Irish producers, we have worked with him for over 15 years. We recently had a few days off and popped into his smoke house in Shanagarry. Bill has his own technique, which he has been using for over 30 years. He stands at his filleting and slicing table, where he has peaceful views of green pastures and a distant sea. Who wouldn’t be happy working alone, at trade he loves, and producing some of the finest smoked salmon in Ireland? Everything is done here by Bill, from the salting and smoking to hand slicing and packing.. He is a very contented one man band and time has left him alone.
Granstown Farm Free Range Irish Eggs Co.Laois
Eggs are the wonderful ingredient, if we were stuck on a dessert island and could only bring only one food it would have to be eggs, they provide such variety in cooking. Matt Bergin from Granstown Farm in Ballacolla Co.Laois provides us with our Irish eggs. We not only use these in the restaurant in Donnybrook but we also sell them, and they have a very loyal following with our customers. There is nothing better than a fresh egg!
